All 5 courses run for 12 weeks and are delivered in-person training at our Nanaimo campus.

Professional Cooking Fundamentals

Knife skills, stocks, sauces and line cooking in a working teaching kitchen.

  • Execute core cooking methods to a consistent professional standard
  • Run a kitchen station through a timed service
  • Produce mother sauces and derivative sauces from scratch
  • Cost a menu item and calculate food cost percentage

Baking & Pastry Arts

Breads, viennoiserie, pastry and desserts in a dedicated bakery workshop.

  • Produce a range of yeast-raised and laminated products
  • Work confidently from a formula using baker’s percentage
  • Prepare and finish cakes, tarts and plated desserts
  • Plan a morning bakery production schedule

Hotel & Front Office Operations

Reservations, check-in, guest recovery and property management systems.

  • Process reservations, arrivals and departures on a PMS
  • Resolve a guest complaint using a structured recovery approach
  • Coordinate with housekeeping and maintenance effectively
  • Complete daily front-office reporting

Food Safety & Kitchen Management

FOODSAFE-aligned hygiene, HACCP principles, ordering and cost control.

  • Write a basic HACCP-based food safety plan
  • Run a stock control and rotation system

  • Train and supervise staff on hygiene routines

Barista & Café Operations

Espresso craft, milk texturing, latte art and running a café shift.

  • Dial in a grinder and pull consistent espresso shots
  • Texture milk and pour standard latte art patterns
  • Open, run and close a café shift independently
  • Maintain and clean espresso equipment correctly
